Tartare of SRB beef fillet with olive oil, breadcrumbs, garden cress, chives, soured pepper cream, smoked reindeer heart, vendace roe, mushroom emulsion, lingonberry pearls, almond potato chips, pickled mustard seeds

Starter

Butter-fried langoustine with maple syrup, Gáhkku, langoustine flavored paprika emulsion, charred blood orange, pickled red onion and pulled celery stalk

Main Course

Fillet of beef Rossini with red wine jus, whipped foie gras butter with port cooked onions, potato terrine

Almond cake with dulce de leche ice cream, caramelized popcorn and Swedish winter apples
