Tartare of SRB beef tenderloin with olive oil, breadcrumbs, garden cress, chives, sour pepper cream, smoked reindeer heart, vendace roe, mushroom emulsion, lingonberry pearls, almond potato chips, pickled mustard seeds

Starter

Butter-fried Norwegian lobster with maple syrup, Gáhkku, paprika emulsion with a taste of Norwegian lobster, charred blood orange, pickled red stew onion and pulled celery stalk

Main Course

Filet mignon Rossini with red wine jus, whipped foie gras butter with port wine poached onion, potato terrine

Dessert

Almond cake with dulce de leche ice cream, caramelized popcorn and Swedish winter apples

Tortellini with roasted hazelnuts, fermented mushroom broth. Charred stew onions, winter truffle. Baked celeriac, marigold flower, rosemary, thyme oil and fried king oysters
