To enhance the flavor journey even further, Oscar and Dao, along with the service team, have selected drinks from our wine room that perfectly harmonize with the dishes and create a comprehensive experience where food and drink go hand in hand.

APPETIZER – CHAR

Minute-cured char, pickled trout roe, seasoned potatoes with a hint of vinegar, beetroot tuile, baked and smoked egg yolk, kohlrabi bundles with apple cream, dill oil, and buttermilk

MAIN COURSE – DUCK

Pan-fried duck breast from Swedish farm duck with pulled orange-glazed duck legs, zested chicken liver mousse, roasted duck jus, spiralized turnip. Pumpkin purée, apple leather, pickled red endive salad, oak leaf lettuce

DESSERT – ARCTIC BRAMBLE

Arctic bramble mousse with sour cream sorbet, browned butter cake, salted cream caramel, and almond meringues. Citrus-marinated blackberries, candied Marcona almonds with picked spruce shoots
